Wild cherry plums compote

This rich compote is a perfect easy dessert for any moment of the day.
- 1kg cherries plums
- 300g caster sugar
- 1 vanilla pod
- Step 1 Put the cherry plums into a wide, deep frying pan, cover it with water, then bring to the boil.
- Step 2 Cook for 15 mins, stirring now and again until the fruit is starting to soften.
- Step 3 Tip in the sugar, stir until it dissolves
- Step 4 Add vanilla, then bring back to the boil.
